Tapioca Fruit Salad
This salad goes well with ham or with macaroni and cheese. We sometimes take it on a picnic and eat it with roasted
hot dogs.
Tapioca Fruit Salad
Mix together and cook to a full boil: 4 1/2 oz. pkg. vanilla tapioca pudding, 3 T. orange breakfast drink powder, 1 cup water, 1 cup
skimmed milk and 1 cup juice from a 1 lb. 13 oz. can of sliced peaches in light syrup, or 1 qt. canned peaches.
Pour mixture into a large dish. Cover with waxed paper. Cool to room temperature.
Fold in: reserved sliced peaches, 1 cup miniature marshmallows, 11 oz. drained mandarin oranges, 1 cup flaked coconut and 1 cup
plain or vanilla fat-free yogurt.
Chill three hours, or overnight. Serves 8 to 10.
