Chicken Salad

 

These are salad days and this full-meal salad is one of our favorites.

Chicken Salad
Combine: 4 cups chicken chunks from a three-pound chicken seasoned with salt, pepper and poultry seasoning while cooking, 2
T. salad oil, 2 T. orange juice and 2 T. vinegar. Allow to sit 3 hours or overnight.
Add to chicken and mix gently: 2 cups cooked, salted rice, 1 cup green grapes, 1 cup sliced celery, 1 cup pineapple pieces, 1 cup
mandrin oranges, 3/4 cup almond pieces and 1 cup mayonnaise. Serves 6 to 8.
